Big Eye Tuna | Chilled Carrot Espuma | Pearl Barley Risotto | Veal and Lentils

Big Eye Tuna with Ginger Soy Dressing

Dish Components:
4 ea Tuna Sliced
5 ea Cucumber Sliced
Micro Cilantro
Citrus Coriander
1tbsp Ginger Soy Dressing

Tuna Preperation:
Remove bloodline and skin from the tuna loin.
Cut lengthwise in desired size loins.
Freeze briefly to set the protein.
Cut in ¼ inch slices.

Cucumber Preperation:
Slice the cucumber very thin.
Store cold.

Ginger Soy Dressingl:
20g Dark Soy
20g Rice Wine Vinegar
10g Lime Juice
20g Grapeseed Oil
10g Extra Virgin Olive Oil
10g Ginger
10g Sugar

Preperation:
Mix soy sauce, all acids, and micro planed ginger.
Add grapeseed and olive oil.
Season with sugar.
